Birthplace: Yokosuka-shi, Kanagawa-ken, Japan

Born as a third-generation of a traditional wagashi (Japanese confection) store, Master Mitsubori started to inherit wagashi-making skills from a young age. 

Having been exploring how to bring traditional wagashi into the modern world and proper ways of regional wagashi stores' development over the years, in 2015 he founded his own school of wagashi, Ichika-ryu of Kadō, relying on his own philosophy.

Master Mitsubori believes that the artistic beauty of wagashi, which emerges from traditional skills, deserves to be passed down in its artistic worth rather than commercial value.

Based on Chado (Japanese tea ceremony)'s Otemae (tea-serving), Master Mitsubori creates delicate wagashi artworks by using bespoke utensils and calculated gestures. He treats his art creations as a brand-new way of entertainment for wagashi and he is devoting himself to spreading it to an international audience.
